I have a chance to upgrade, but I can't find any difference between the two boats except that the VIIC is slightly larger and thus, slightly slower. The conning towers appears larger on the VIIC. I was wondering, would this allow me to have a flak gunner on deck while I also had a full watch crew? Any suggestions or tips would be appreciated?

I have also asked me this question. I am in January-41 and has had the possibility to upgrade from VIIB to VIIC for the last three patrols, but I have not seen any gain in upgrading. According both to the electronic description and to the manual, you will lose some speed, and only gain a small difference in diving time.
I had expected a better range, since the uboat is longer and should have more space for diesel fuel, but the extra space is used to something else, I do not know to what. Perhaps the living was slightly better for the crew then, but for me in this game I cannot see any gain.
I would very much have opinions from those, who has made this upgrade. Was it worth the cost in renown, and if so how was it better?
